Have you got a better description/video of the juddering? I'm not sure. Mine does some sort of judkud under throttle in too high of a gear, but otherwise silent.

Unsure which way, depends on how you imagine the twisting. I'd probably try diagonally opposite first. So if your existing arm is forward, the new arm should be rearward. Kind of like leading and trailing spokes. Dunno, now my head hurts. Try both.

Nice. I used to ride one of them around Bermuda.

Sounds like a fun journey. Makes me wanna pack.

I'd try to keep your two bikes as similar as possible. Being able to swap parts, diagnose noises, etc, is a big advantage.

I was considering rim brakes for simplicity, but unfortunately, my frame nor my fork has the mounts. On two of my bikes, I have four brakes. Four cables. Four levers. 2 disc, 2 rim. Each hand has front and rear. One finger on each. So when increasing the voltage, not only the speed and power increases, but the discance will increase too. 48V 7Ah = 336Wh 96V 7Ah = 672Wh You have more energy available with higher voltage. Maybe grin would do a custom winding in their all-axle?? And use stub axles.
Use two of them for the primary wheels to give steering and reversing, and 4x castors for the corners.

The main defining point should be maximum 60 volts.
That is the world accepted safe DC voltage level. And ebikes are very hands on at the user level, trained or untrained.
